No-bake Nutella Cheesecake

Sasayu – Helsinki

Yesss…you read it correctly. Who doesn’t like Nutella??!! I’ve made the recipe in several occasions and so many people asked me the recipe. Sorry for making you wait. This treat is awesomely decadent and delicious. So please eat responsibly! I know when you try this treat you can’t stop gulping and licking the spoon, so remember your waistline: P!!

Crust (ground in a food processor):

– 1 pack of digestive cracker/graham cracker (400 g)
– 100 g of unsalted butter
– 50 g granulated sugar
– 2 tbsp of nutella
– 50 g hazelnuts
– 2 tsp of vanilla extract (optional)

– 400 g Philadelphia Cream Cheese (plain), softened at room temperature.
– 100 g of powdered sugar
– 1 jar (350 g) of Nutella (or other Hazelnut spread)
– 2 tsp of vanilla extract (optional)
– 60 mL of heavy cream

Chocolate Ganache for topping:
– 120 mL heavy cream
– 100 g of dark chocolate (cut into small pieces)
– 1 tsp of butter (about 20 g)

How it’s made:

1. Crush all the crust ingredients in a food processor until finely ground. The mixture should hold well when pinched between your finger.

2. Pour and press the crust mixture in the bottom of 25 cm diameter springform pan, set it the freezer for 15 minutes.

3. In the bowl of a standing mixer with a paddle attachment, add the filling ingredients, mix everything on medium speed until you get smooth batter (about 5 minutes).

4. Pour the batter into the prepared crush, cover the top of the pan with aluminium foil and put it in the fridge overnight or two nights. (two days are better, the batter becomes harder)

5. Before you serve it, make the chocolate ganache by simmering the heavy cream in a small saucepan. Pour the hot cream in a bowl with the crushed dark chocolate and let the mixture sit for 3 minutes.

6. Add the butter and whisk everything together until everything is melted.

7. Pour the chocolate ganache on the cheesecake and let it sit in the fridge for another hour.

8. Remove the sides of the springform, garnish the cheesecake with chopped hazelnuts and powdered sugar. Enjoyyy!

NOTE: Nutella can be pricey, so to cut the budget you can combine Nutella with other hazelnut spread.
